We wrote élevage, our well regarded blog on the world of wine, from 2005 through 2017. Élevage refers to the time wine ages in barrel or tank from the end of fermentation through to bottling. It’s sometimes called the “education” of wine. The inspiration for the name, besides our background in higher education, is that we love learning about wine, hope you do, too, and we find that the best wines educate us about many things, wine-related and beyond. As the wine business has grown, so too has the time for elevage declined. However, it’s still a fun read and you never know when it might come back.
