Racking the 2011s

I spent yesterday in the winery racking all 16 barrels of 2011 Vincent Pinot Noir. Racking is jargon for pumping or siphoning the wine out of one barrel into another clean barrel, leaving behind sediment and giving the wine a little oxygen to help it develop. Everything smelled good and fresh. The next step is to taste through all the barrels and try to figure out which ones I want to blend together for the various bottlings I do. All the wine will be bottled in August and released in the fall. But keep in mind – we’ll only have about 400 cases total. With 2010 already sold out, I expect the 2011s to sell quickly.
