We’ve written élevage, our well regarded blog on the world of wine, since 2005. Élevage refers to the time wine essentially cures in barrel or tank from the end of fermentation through to bottling. It’s sometimes called the “education” of wine. The inspiration for the name, besides our background in higher education, is that we love learning about wine, hope you do, too, and find that the best wines educate us as much as we learn about them.
